Gazpacho

Here is a suggestion to inspire you when your vegetables arrive:

A very fresh Gazpacho where tomato is king! Versatile and healthy, tomatoes can be eaten raw, in sauces, or dehydrated. It has great antioxidant and anti-inflammatory power, and consuming at least one medium unit per day is recommended.

 

Ingredients

  • 3 garlic cloves,
  • 1 tbsp salt;
  • 400 g tomatoes (ripe);
  • 2 tbsp olive oil;
  • 2 tbsp vinegar;
  • 1 tbsp oregano;
  • 150 g green pepper;
  • 150 g cucumber;
  • 1.5 l cold water;
  • 150 g Alentejo bread (stale).

 

Preparation

  • Start by crushing the garlic in a mortar with the salt until you get a paste.
  • Place this paste in a bowl and add the olive oil, vinegar, and oregano.
  • Peel 300 g of the tomatoes, blend them, and add to the mixture.
  • Then dice the cucumber, the pepper (after removing the seeds), and the remaining tomato.
  • Add the water.
  • It is customary to add small bread cubes at the end.
