With its characteristic flavor, watercress is a vegetable that can be consumed in juices, soups, and salads; its rich nutritional properties are very beneficial for your health. Rich in vitamins, potassium, iron, calcium, and phosphorus, its powerful antioxidant properties strengthen the immune system.
Here is a suggestion for you to prepare with our vegetables:
Ingredients
- 2 potatoes;
- 3 carrots;
- 2 zucchinis;
- 1 piece of pumpkin;
- 2 onions;
- 3 cloves of garlic;
- watercress (leaves and stems);
- olive oil;
- water;
- salt.
Instructions
- Wash the vegetables well, peel them, and cut them into pieces.
- Sort the watercress, separate the leaves, and use the most tender stems.
- In a pot, place all the vegetables except for the watercress leaves and cover with water.
- Season with salt, cover, and let cook for 30 minutes.
- Once everything is cooked, remove a few carrot slices and set them aside.
- Blend the soup with a hand blender.
- Adjust the seasoning and, if necessary, add a little more water; bring to a boil, add the watercress leaves and the reserved carrot cut into small cubes.
- Let it boil for 3 minutes and turn off the heat.
- Add a drizzle of olive oil and it’s ready to serve.
