Ingredients
- 400 g chicken breast cut into strips;
- 250 g sliced mushrooms;
- Broccoli;
- 1 Courgette;
- 250 g Basmati rice;
- 2 tsp + 1 tsp salt;
- 1 tsp garlic powder;
- 1 tsp curry powder;
- 3 tbsp olive oil;
- freshly ground pepper to taste;
- 1 tbsp balsamic vinegar.
Instructions
- Wash the broccoli and courgette and cut them as you prefer;
- Cook them for 10 minutes, then remove and set aside.
- Place the chicken strips in a food bag, add 1 teaspoon of salt, the garlic powder, and the curry. Close the bag and shake it well to distribute the seasonings evenly.
- Heat half the olive oil in a wok or large frying pan, and add the chicken strips and mushrooms.
- Sauté over high heat for 2 to 3 minutes, stirring constantly.
- Add the vegetable mixture, season with 1 teaspoon of salt, and stir. Let it cook over moderate heat for 20 minutes.
- Place the remaining olive oil in a saucepan, add the rice, and fry for 1 to 2 minutes, stirring frequently.
- Sprinkle the chicken and vegetables with ground pepper and drizzle with balsamic vinegar.
- Serve the chicken with vegetables accompanied by the rice.
