Here is a suggestion to inspire you when your vegetables arrive:
A very fresh Gazpacho where tomato is king! Versatile and healthy, tomatoes can be eaten raw, in sauces, or dehydrated. It has great antioxidant and anti-inflammatory power, and consuming at least one medium unit per day is recommended.
Ingredients
- 3 garlic cloves,
- 1 tbsp salt;
- 400 g tomatoes (ripe);
- 2 tbsp olive oil;
- 2 tbsp vinegar;
- 1 tbsp oregano;
- 150 g green pepper;
- 150 g cucumber;
- 1.5 l cold water;
- 150 g Alentejo bread (stale).
Preparation
- Start by crushing the garlic in a mortar with the salt until you get a paste.
- Place this paste in a bowl and add the olive oil, vinegar, and oregano.
- Peel 300 g of the tomatoes, blend them, and add to the mixture.
- Then dice the cucumber, the pepper (after removing the seeds), and the remaining tomato.
- Add the water.
- It is customary to add small bread cubes at the end.
