Green bean soup

Soups are always an excellent choice for healthier and more nutritious meals. A classic that never fails and reminds us of our grandparents’ house is green bean soup. A practical, creamy, and tasty recipe, perfect for colder days and one that everyone will love, from the little ones to the grown-ups.

Ingredients

  • 3 large potatoes;
  • 6 carrots;
  • 1 large onion;
  • 300 g trimmed and sliced green beans;
  • 100 g rice (optional);
  • vegetable stock to taste;
  • salt to taste.

Directions:

  • Start by peeling the potatoes, onions, and carrots. Wash and cut into pieces;
  • Place on the heat with the vegetable stock;
  • Season with salt to taste;
  • Once the vegetables are cooked, blend until you get a purée (add more stock if necessary);
  • Bring the purée back to a boil;
  • When it boils, add the green beans (already trimmed and sliced);
  • Add the rice (optional);
  • Adjust the seasoning and let it cook for another 15 minutes;
  • Drizzle the soup with a little olive oil and serve.
