Soups are always an excellent choice for healthier and more nutritious meals. A classic that never fails and reminds us of our grandparents’ house is green bean soup. A practical, creamy, and tasty recipe, perfect for colder days and one that everyone will love, from the little ones to the grown-ups.

Ingredients
- 3 large potatoes;
- 6 carrots;
- 1 large onion;
- 300 g trimmed and sliced green beans;
- 100 g rice (optional);
- vegetable stock to taste;
- salt to taste.
Directions:
- Start by peeling the potatoes, onions, and carrots. Wash and cut into pieces;
- Place on the heat with the vegetable stock;
- Season with salt to taste;
- Once the vegetables are cooked, blend until you get a purée (add more stock if necessary);
- Bring the purée back to a boil;
- When it boils, add the green beans (already trimmed and sliced);
- Add the rice (optional);
- Adjust the seasoning and let it cook for another 15 minutes;
- Drizzle the soup with a little olive oil and serve.
