Sundays with the family at the table have a different flavour. Celebrate Mother’s Day with a meal prepared with love, as a family. Here’s a recipe suggestion to make you feel like a real pizzaiolo when you use your Weber grill and accessories. Surprise everyone with a different programme. Fun and flavour are guaranteed!
Ingredients:
- 360 ml of water
- Salt to taste
- 2 g of yeast
- 650 g of plain flour
- 300 g of tomato sauce
- 4 tablespoons of extra virgin olive oil
- 400 g of mozzarella or fior di latte
- 1 tablespoon of oregano
- 20 fresh basil leaves
- Ingredients to taste

- Pizza base
Directions:
- Put the water in a mixer, dissolve the salt, add 10 per cent of the total amount of flour and add the yeast.
- Switch on the mixer and gradually add the rest of the flour until the desired dough consistency is reached.
- Mix the dough at a low speed for 20 minutes until the dough forms a single ball.
Tip: To get the best dough consistency, make sure you control the amount of water. The mixture should be sticky, soft and elastic to the touch. - Remove the dough from the mixer and place it on a surface to rest for about 2 hours at room temperature.
Then cut the mixture into small balls, so that each one weighs between 170 and 230g. - Place the balls in a box or tray so that they can ferment for 4 to 6 hours.
- Prepare the grill for indirect high heat (280-290° C), place the pizza plate on the cooking grid and
preheat the pizza stone for 15-20 minutes. - Meanwhile, season the tomato sauce with oregano and salt. Chop the mozzarella. Roll out the dough balls into discs ensuring that the centre is no more than 4 mm thick. Pour a quarter of the tomato sauce into the centre of each base, then, in a spiral motion, cover the base with the sauce, leaving 1 cm around the edge. Spread the mozzarella evenly, before adding some basil leaves and a little extra virgin olive oil.
- Add any other ingredients you like.
- Sprinkle the pizza peel with a little flour to make the surface less sticky. Using the pizza peel, slide it onto the pizza stone and close the grill lid. Cook the pizza over indirect heat until the base is crispy.
