With the arrival of warm days, there’s nothing more pleasant than gathering friends and family for a delicious vegetarian barbecue at home. Ingredientes:
- 2 aubergines
- 1-2 lettuce hearts
- 1 cucumber
- 1 red onion
- 4 hamburger buns
- 1 bowl of fresh coriander
- 250 ml Greek yoghurt
- 75 ml vegetable oil
- 1 tablespoon curry powder
- Juice of 1/2 lime
- 3 garlic cloves
- Salt and pepper to taste
Directions:
In the kitchen
- Wash the aubergines and cut them into 1 cm thick slices. Wash the lettuce and coriander, peel the onion and slice it.
- Now prepare the curry marinade. Mix the oil, curry powder and lime juice. Peel the garlic cloves, crush them and add them to the marinade.
- Coat the aubergine slices with plenty of the curry marinade on both sides and season with salt and pepper.
- Put the Greek yoghurt in a bowl to make the tzatziki. Wash the cucumber, grate it and squeeze out the excess liquid. Mix it into the yoghurt. Peel the garlic, crush it and add it to the mixture, along with salt and pepper.
On the grill
- Prepare the grill for direct heating at approximately 220ºC. If you’re using a charcoal grill, just fill the burner halfway with firelighters.
- Cook the aubergine slices over direct heat for 3-4 minutes on each side, until they show the grill marks.
- Open the hamburger buns and drizzle a little oil on the cut side. Toast them lightly over direct heat for 3-4 minutes on each side, until they also show the grill marks.
- Place the lettuce on the bottom of the bun and add the tzatziki, the two slices of grilled aubergine, the onion rings and the fresh coriander.
Note: For an even tastier recipe, an excellent option is to add aromatic herbs. As well as being a natural substitute for salt, herbs add flavour to food and their fresh, intense aroma spreads throughout the house. Best of all, with urban gardens you can plant an aromatic garden at home and transform your meals!
