It’s indescribable how flavors can make us travel. Without leaving your garden, surprise your family with a journey to the flavors of Italy with a simple and tasty starter or light meal, made on your Weber grill and with the best seasonal Portuguese products, available in the Horto Fresh vegetable basket!
Ingredients:
- 4 large, ripe tomatoes
- Salt
Ratatouille:
- 1 medium red onion, cut crosswise into slices about 1 cm thick
- 1 medium red pepper, stemmed and seeded, cut into flat pieces
- 1 medium zucchini, cut lengthwise into pieces about 1 cm thick
- Extra virgin olive oil
- Freshly ground black pepper
- 2/3 cup grated mozzarella cheese
- 1 tablespoon finely chopped fresh basil
- 1 teaspoon balsamic vinegar
Directions:
- Start by cutting a slice about 1.5 cm from the top of each tomato
- With a small knife, cut around the inside of the tomato (do not cut through the base of the tomato) to about 1 cm from the tomato skin.
- With a teaspoon, remove the inside of the tomato to leave room for the ratatouille.
- Place a little salt inside the tomatoes and turn them cut side down on a tray lined with paper towels while you prepare the ratatouille.
Ratatouille
- Lightly brush the previously cut onion, pepper, and zucchini with olive oil. Season with salt and pepper to taste.
- Grill over direct medium heat (175°C to 230°C), with the lid closed as much as possible, until tender, turning once. (Onions take 8 to 12 minutes to roast, and peppers and zucchini take 6 to 8 minutes).
- Transfer the grilled vegetables to a cutting board and chop them into pieces about 1 cm.
- In a medium bowl, mix the grilled vegetables with the cheese, basil, and vinegar.
- Using a spoon, place the ratatouille inside the tomatoes. Grill the tomatoes over indirect medium heat until the cheese melts and the vegetables are heated through, for 8 to 12 minutes.
Et voilá! Ready to serve!
