Light: Most herbs used in cooking enjoy sheltered, sunny spots. 4 hours of direct sun a day is the “bare minimum” for most, though some—like mint—tolerate shadier environments.
Watering: Moderate—only when the soil starts to dry out, as overwatering is a common cause of death for herbs (and more!). Always check the soil moisture with your finger before watering. Watch out for saucers that collect standing water, as they promote root rot. Choose pots with drainage holes.
Soil: Use a light, fertile, and well-draining substrate. There are specific herb mixes, but an outdoor substrate with expanded clay at the bottom for drainage also works.
TIPS
– Keep in mind that the smaller the pot and the less soil/substrate the plant has, the faster it will dry out, requiring more frequent watering. Conversely, if the plant is grown in the ground, it will resist dry spells better. Similarly, if your herbs get direct sun all afternoon in the summer, they’ll need more water. If they only get direct morning sun, they need a bit less. In winter, even less!
– Prune regularly to stimulate growth and prevent the plant from flowering and seeding prematurely (common with coriander and basil, for example).
– When harvesting, cut whole stems from the base.
– But remember, many herbs have an annual life cycle, so don’t be surprised if your plant starts to wither when the cold arrives—like coriander.
